Great Grains Panel
Founded in 2012, The Food Book Fair celebrates the intersection of food culture and food systems and a ton more. This year, the event took place April 10th through 12th at the Wythe Hotel in Brooklyn and Heritage Radio Network was there to catch the highlights. In this featured panel, we examine the past and future of grains and their relationship to the near-universal food: bread. As the general public is learning more and more about how grains like wheat have changed due to science and industrialization, the question remains: does it really matter?
