A Taste of the Past
Meat Loaf & Casseroles: Food of the Great Depression
After WWI, America went from sending food to war-starved Europe to suddenly no longer being the land of plenty. Authors Jane Ziegelman and Andy Coe discuss the culinary impact of that period which they chronicle in their new book, A Square Meal, A Culinary History of the Great Depression.
Andy Coe and Jane Ziegelman are married culinary historians. Coe is the author of Chop Suey: A Cultural History of Chinese Food in the United States. Ziegelman is the author of 97 Orchard Street: An Edible History of Five Immigrant Families.
"The United States, because of the abundance of natural resources, never really developed that knack for making something out of nothing. So, we were blessed in that one sense, but we were sort of deprived in another." [4:35] – Jane Ziegelman
