Known as the ‘Flavor Saver’, David S. Shields helped to restore much of Southern America’s historic crops with his research. His many accolades include chairing the Carolina Gold Rice Foundation, as well as winning Slow Food USA’s “Snail Blazer of Biodiversity” and the Southern Foodways Alliance “Keeper of the Flame” award. He’s currently the Carolina Distinguished Professor at University of South Carolina, and the author of Southern Provisions: The Creation & Revival of a Cuisine and The Culinarians: Lives and Careers from the first Age of American Fine Dining.
