Ken Albala is a professor of history at the University of the Pacific. He has authored a number of books on food including scholarly histories, single subject studies, cookbooks, encyclopedias and reference works. He has edited over 100 titles and was coeditor of the journal: Food, Culture and Society. His food history course is available from The Great Courses and he is currently filming a second series on historic cooking.
