Wellness in the Schools is promoting healthy eating and exercise for schoolchildren! This week on Feeding the Future, Orianne Cosentino is joined by Nancy Easton, Executive Director, and Bill Telepan, Executive Chef, to talk about the importance of nutritious cafeteria lunches. Ori begins the show by rethinking food waste after attending a Common Threads workshop, and then dives in with Nancy and Bill. How did Nancy's experiences as a school teacher help her realize the need for health promotion in schools? How did Bill get involved with the project, and what are some of the challenges that New York City school kitchens face? Any Fruit Compote
For every 1 cup of fruit, peeled and chopped
(choose one or mix and match)
cranberries*
peaches
apples
pears
berries (straw, black, blue, ras)
plums
rhubarb*
cherries
1/4 cup water
1 tablespoon honey or other sweetener
• Place fruit in a small saucepan.
• Add water and honey.
• Let simmer gently on the stove until fruit is broken down and mixture is starting to thicken.
• Cook until desired consistency, sweeten to taste.
*tart fruits will need more sweetener
