Raclette is one of the most adaptable cheeses. If it was a person, it would be just as comfortable in overalls as it is in a tux. Sound crazy? Stay with me….

According to Emmi USA, Raclette is the cheese of legend, based on the story of a man from Valais by the name of Leon. One cold day, with food scarce in the open pastures, Leon heated up a piece of cheese on the open fire to ease his hunger and keep warm. He found the melted cheese had a transcendent flavor. It not only complemented other foods – it made a great, satisfying meal for his family.

Basically, raclette is of humble beginnings, and one of the best ways to enjoy this gooey cheese is the same way that Leon first did – over an open fire. I’m speaking from experience. The last time I enjoyed raclette was at Shacksbury’s Harvest Camp in Vermont. The affair kicked off with cans of locally-produced cider, fire-roasted raclette, and crunchy bread.

Luckily, you don’t have to have fire-tending skills to properly enjoy the wonders of raclette. This is a cheese that can elevate any occasion – from burger night to brunch! For serious cheese lovers, a raclette grill can be used to perfectly melt the cheese and dramatically scrape it to serve. If you don’t have a special grill for your cheese, you can simply pre-slice the raclette and place it in the oven to melt!
