Asahi Shuzo (DASSAI) is located deep in the mountains of Yamaguchi prefecture in Japan. We make only Junmai Daiginjo, the highest quality of sake, made from the king of sake rice “Yamada Nishiki”.
On 23rd September of 2023, we opened our new brewery in New York, and are making a new sake called “DASSAI BLUE”. This new sake is made using New York water and the same Yamada Nishiki we use in Japan, but will be made using New York water and Yamada Nishiki rice from Arkansas in the near future.
The name “DASSAI BLUE” is derived from a Japanese proverb literally translated as, “Although blue dye comes from the indigo plant, it is bluer than indigo.” The deeper meaning is that we expect DASSAI BLUE to surpass the existing Dassai brand in greatness. All of us at Asahi Shuzo aim for truly great sake which anybody could tell when tasted.
