Claire is the co-founder of the Tin Roof Community, an organization that tackles the issue of sustainability within the hospitality industry. Tales of the Cocktail honored Tin Roof with the industry’s first ever “Sustainable Spirit” awards and the 2017 “Golden Spirit” educator award. Claire has also been a bartender, manager and consultant at some of the country’s most well-known cocktail institutions, from Houston to San Francisco. She just opened her first bar, Hunky Dory in Crown Heights, Brooklyn. This allows her to explore greener bar practices, while sharing Tin Roof’s goal to create a culture of inclusivity around sustainability.
